Centerplate to Deliver Significant Game-day Enhancements for Fans of the Fighting Irish
SOUTH BEND, Ind., Sept. 1, 2011 /PRNewswire/ — Centerplate, the largest
hospitality partner to North America’s premier sports stadiums, convention
centers and entertainment venues, announced today a series of new menu concepts,
service enhancements and fan promotions for the upcoming Fighting Irish football
season.

Stadium Enhancements
Centerplate, in partnership with the University, has made a number of physical
upgrades to the stadium to enhance its offerings and increase convenience. In
addition to aesthetic improvements to service areas, including new menu boards
and signage, the company increased the stadium’s cooking capacity with the
addition of new grill stands, carving stations, and chef-attended action carts
on the concourse. Furthermore, Centerplate installed a new point-of-sale system,
which will speed service and provide fans greater payment flexibility.
Menu Highlights
In addition to improving the quality and flavor of the traditional football
snacks, Centerplate’s chefs have added menu variety with new concepts created
specifically for the University such as:
Legendary Irish Poppers – Corned beef, sauerkraut and swiss cheese balls breaded
with caraway panko bread crumbs and fried to a golden crisp. Served with
thousand island dressing for dipping.
Legendary Grilled Breast of Chicken Sandwich – Grilled breast of chicken topped
with corned beef, swiss cheese, thousand island dressing, Notre Dame green
relish served on a freshly baked Kaiser roll.
Legendary Beef Prime Rib Sandwich – Carved to order garlic rosemary smoked prime
rib of beef sandwich on kaiser roll with crispy fried onions, horseradish
mayonnaise, au jus. House made kettle chips.
Legendary Irish Nachos – Thin sliced potato chips are golden fried and topped
with shaved corned beef brisket, sauerkraut, shredded swiss cheese, green onions
and served with thousand Island dressing.
Legendary BBQ Nachos – Pork shoulder, rubbed with love, slow smoked on-site and
pulled by hand is placed atop blue and gold tortilla chips served with three
signature sauces: citrus chipotle, carolina mustard and smoky original.
Legendary Burger – Grilled 8 oz burger topped with caramelized onions, garlic
thyme fried mashed potatoes, melted smoked Gouda cheese served on a toasted
kaiser roll spread with grain mustard butter.
Legendary Carved Corned Beef Brisket Sandwich – Piled high on marble rye bread
and topped with choices of sauerkraut, caramelized onions, pickles, swiss
cheese, and house made kettle chips.
Legendary Carved Roast Turkey Breast Sandwich – Served on a freshly baked kaiser
bun dressed with dill havarti cheese, lettuce, tomato and peppered mayonnaise
served with house made kettle chips.
Legendary Indiana Pork Tenderloin Sandwich – Lightly breaded pork tenderloin
sandwich finished with iceberg lettuce, sliced tomatoes, crisp onions, and
pickles on a freshly baked bun.
South Bend Chocolate – A local chocolate company who got its start making
chocolates under a license from the University of Notre Dame
Chip Stix – A full ribbon cut potato, fried and served on a skewer with choices
of seasonings including BBQ, Garlic Butter and Cheddar Cheese, the “ultimate
fried potato with a twist”
Fan Appreciation and Special Promotions
Centerplate will be offering a fan appreciation promotion, the new collectors’
series of souvenir cups, an “All You Can Drink” souvenir cup.
Service Training Enhancements
To complement its culinary and design additions, the company has also initiated
a series of enhancements to its service training and experience assurance
initiatives. Centerplate’s training program, which has been completely revamped
and re-launched for this season as Centerplate University, is based on a series
of training sessions that reinforce the principles and behaviors of gracious
guest service for a better fan experience.
